I have a small pan and usually make a one-egg omelette. Before starting, I fry some diced streaky bacon and some chopped shallot. I usually sprinkle some sage and thyme onto the egg in a bowl, as well as salt and pepper. I add about a teaspoon of milk or cream and lightly beat the egg mixture with a fork. This goes into the pan and is stirred into the bacon and shallot. A one-egg omelette is ample for me!
