Sunny Fish Bake Recipe
1 lb. frozen or fresh fish fillets
1/4 cup flour + 2 tbsp., divided
1 tsp. salt, divided
1/3 cup + 2 tbsp. shortening, divided
1 cup milk
2 egg yolks, beaten
2 tbsp. minced onion
Dash pepper
1/3 (generous) cup Sharp Cheddar cheese
Cut fish into serving size portions. Dry on paper towels. Roll in 1/4 cup flour and 1/2 tsp. salt mixed. Brown in skillet with 1/3 cup hot shortening. Transfer fish to a greased shallow baking dish. Pour Sunny Sauce over fish; sprinkle with cheese. Bake at 375 for 15 minutes, or until fish flakes easily with a fork.
Makes 4 servings.
Sunny Sauce:
Melt 2 tbsp. Crisco in small saucepan; blend in 2 tbsp. flour, 1/2 tsp. salt and pepper to taste. Add milk. Cook till sauce comes to a boil. Add beaten egg yolks and onion.
